Rick's Stuffed Mushrooms

  • 28 large white mushroom caps (2-1/2 inch)
  • 1/2 c. Italian-style bread crumbs
  • 1/2 c. Romano
  • 2 tbsp. olive oil
  • 1 clove of garlic, minced
  • 2 tbsp. chopped parsley
  • salt and pepper to taste
Preheat oven to 400 degrees F. Mix bread crumbs, Romano, garlic, parsley, salt and pepper with 2 tbsp. of olive oil. Chop mushroom stems and add to the mix. Grease baking sheet with olive oil. Stuff mushroom caps with mixture. Drizzle olive oil over caps. Bake 20-25 minutes until brown.
