Mexican Rice

  • 2 tbsp. light olive oil
  • 1 c. white rice
  • 1 medium onion, finely chopped
  • 1 medium green pepper, finely chopped
  • 2 tsp. chili powder
  • 1 c. canned tomatoes
  • 1 c. boiling water
  • Salt to taste
Heat oil in a heavy skillet over medium heat. Add rice and onion, cook until rice is browned and onion is soft. Add green pepper, chili powder, tomatoes, boiling water and salt. Cover and bring to a boil. Reduce heat and continue cooking 30 minutes.  Makes 6 servings.
