- 3 c. milk
- 3 c. cream
- 3 lemons
- 3 bananas
- 3 oranges
- 3 c. sugar
Combine sugar and milk and stir until sugar dissolves. Partially freeze while juicing oranges and lemons, and mashing bananas. Add fruit juice, mashed bananas and freeze until solid.

- 4 boneless chicken breast halves
- 1 1/2 cups Picante Sauce
- 3 tablespoons packed light brown sugar
- 1 tablespoon Dijon mustard
- 3 cups cooked brown rice
Preheat oven to 400 degrees F. Place chicken in 2-quart shallow baking dish. Mix picante sauce, sugar, and mustard. Pour over chicken. Bake in oven for 20 minutes or until chicken reaches an internal temp of 165 degrees F. Serve chicken with rice.

- 1 egg, beaten
- 1/4 c. vegetable oil
- 1/2 tsp. vanilla
- 1 c. white flour
- 1 tsp. salt
- 1 c. milk
- 1/4 c. honey
- 1 c. whole wheat flour
- 3 tsp. baking powder
Beat egg in medium bowl, then add milk and oil to blend. Stir in honey and vanilla. Combine dry ingredients, then add to egg mixture. Stir until moist and lumpy. Spoon batter into muffin cups until 2/3 full. Bake at 400 degree F. for 20-25 minutes or muffins are lightly browned. Cool slightly; loosen muffins with spatula and remove. Makes one dozen muffins.

- 10 ozs. fresh spinach
- 3/4 c. fresh tomatoes, diced
- 1 c. potatoes with peel, diced
- 5 white mushrooms, sliced
- 2 tbsp. olive oil
- 2 cloves fresh garlic, chopped finely
Heat olive oil in large skillet. Drop potatoes into oil and brown. Stir often. Drop garlic in when potatoes are almost tender. Add spinach, mushrooms and tomatoes, stirring until vegetables are hot and spinach is wilted. Serve immediately. To speed prep time and reduce fat from olive oil, microwave potato until done, then cube. Less oil will be needed to brown.

- 1 box vanilla wafers
- 2-3 bananas
- 1 box instant vanilla pudding
- 1 pkg. whipped topped
Chop bananas into slices or chunks. Prepare pudding as directed on box. Layer in a large bowl in order: vanilla wafers, chopped bananas, vanilla pudding and whipped topping. Repeat layers as desired.
