June 9, 2005 - Cooper Farms is a large farm located in Fairfield that grows a variety of produce. Owned by Tim and Kathy Cooper of Fairfield, the Coopers basically built their farm from scratch. Cooper Farms is now a 10,000 tree, 12 greenhouse, one-farm-store and multi-roadside-stand operation that grows and sells produce such as tomatoes, squash, potatoes, green beans, pecans, peppers, plums, apricots, cucumbers, okra, blackberries, onions, corn and mostly peaches, said Kyle Hart, a Cooper Farms salesman who is also a teacher at Fairfield Junior High.

Hart works at the roadside stand located at the Shell station at Lake Air and Sanger in Waco. He also tends to the booth at the Waco Farmer's market. Cooper Farms has many roadside stands located along Interstate-45.
